Upon arrival, the fruit was put directly into the press as whole clusters. The juice was then gently pressed and allowed to settle in tank for 24 to 48 hours. After racking to a new tank, fermentation began slowly at cool temperatures, and finished after 6 weeks. The wine was then left on its fermentation lees during the full course of malo-lactic conversion, and racked a minimal amount prior to bottling.
