Stefania Cabernet Sauvignon Ukraine
Crushed cassis leaves, adding a herbaceous lift. Black plum skin, with a slightly tart edge. Notes of Vanilla and Chocolate covered cherries.
Nose: Blackcurrant, cherry, plum, subtle pepper, light vanilla, bramble.
Palate: Medium-full body, ripe dark fruits, integrated tannins, balanced acidity, dark chocolate hint.
Finish: Long, lingering fruit, gentle tannins, warm spice, earthy undertone.
Pairing
Prime Rib with Herb Crust: The wine's surprisingly robust tannins and concentrated fruit stand up beautifully to the richness of prime rib.
An herb crust with rosemary, thyme, and garlic complements the wine's subtle herbal notes.
Grilled Lamb Chops with Red Wine Reduction: The gamey notes of lamb are a perfect match for the wine's earthy undertones.
Serve with creamy polenta or mashed potatoes for a comforting contrast to the wine's structure.
Beef Bourguignon: The wine's complex flavors and full body make it an ideal companion for this hearty stew.
The earthy notes of the mushrooms and the richness of the beef complement the wine's terroir-driven character.
History
Viticulture in Ukraine dates back to the 4th century BC, with evidence of winemaking practices in the Crimean Peninsula during that period. Ancient Greek colonies played a significant role in introducing and developing winemaking in the region.
Winemaking spread further inland during the Middle Ages, with monasteries contributing to its development, particularly around Kyiv and Chernihiv.
In recent years, there has been a resurgence of Ukrainian winemaking, with a focus on producing higher-quality wines.
The ongoing war with Russia has presented extreme challenges to the Ukranian wine industry. Vineyards and wineries have been damaged or destroyed, and the industry faces significant logistical and economic difficulties.
Despite these challenges, Ukrainian winemakers are demonstrating resilience and determination.
