"Memorias Del Rambam Classic Bobal Spain 2022 . Bobal is scientifically one of the healthiest Bobal is known for having more antioxidants than almost any other red grape, leading to a wine that is both "thick-skinned" and incredibly fresh. Nose: It has a vibrant, "Mediterranean" bouquet. You’ll find ripe cherry and black plum, but what makes it stand out are the violet reflections and floral notes of mountain herbs and balsamic (reminiscent of the hills where it grows). Palate: The palate is elegant and "mature." It’s medium-to-full-bodied with velvety tannins. You’ll taste blackberry and red currants balanced by a distinct "snappy" acidity that keeps it from feeling heavy. There are subtle hints of dark chocolate and vanilla from its time in oak. Finish: The finish is clean and lingering, with a savory touch of black pepper and licorice. Pairing The Classic Match: Herbed Lamb Shovels or roasted veal. The wine’s balsamic and herbal notes perfectly mirror the savory herbs in the meat. Spanish Feast: Paella with Duck or a rich mushroom risotto. Grilled Eggplant with a pomegranate reduction—the wine's acidity loves the tang of the pomegranate. A Legacy of Excellence "Memorias Del Rambam" (Memories of Maimonides) honors the 12th-century philosopher who famously advocated for drinking wine in moderation for physical and spiritual health. It’s a great "story wine" for a date—it says you value history, health, and wisdom.  A Rare Gem: Most people drink Tempranillo or Cabernet. Bringing a Bobal shows a sense of adventure and discovery. It’s a converswines due to its exc eptionally high levels of resveratrol (the heart-healthy stuff). The etching of the Rambam on the label gives the bottle a scholarly, classic aesthetic that looks beautiful under candlelight."
