J. Linder Lake County Cabernet Sauvignon 2023
This Californian Cabernet Sauvignon is a bold, concentrated and intensely mineral-driven red wine. It showcases the distinctive character of its high-elevation, volcanic origins.
Nose: The aromas are rich and complex. Dark, concentrated fruit, specifically blackcurrant, black cherry, and dark plum. These fruit notes are underscored by unique savory tones of graphite, crushed rock, and volcanic earth. Additional hints of eucalyptus, vanilla, and dark cocoa from the oak.
Palate: On the palate, the wine is full-bodied and powerful, with a dense, chewy texture. The dark fruit flavors arevibrant and intense. It carries a firm, structured tannic backbone that is typical of Red Hills Cabernet, yet the tannins are polished.
The wine is dry and boasts a bright, balancing acidity that maintains freshness despite the wine's intensity.
Finish: The finish is long, dry, and distinctly savory, with the mineral and dark fruit notes lingering beautifully.
Pairing
Steak: A classic, excellent pairing. The tannins cut through the fat of awell-marbled Ribeye or Porterhouse.
Roasted Lamb: The wine's savory and earthy notes complement lamb beautifully.
Game Meats: Venison or wild boar.
Beef Stew or Chili: The wine's intensity stands up to rich, slow-cookeddishes.
Aged Cheddar, Smoked Gouda, or Parmesan: The saltiness and texture ofthese cheeses pair well with the wine's structure.
