Nose: Elegant and complexity. A beautiful bouquet of white flowers—think acacia or honeysuckle—intertwined with luscious stone fruit aromas, like ripe peach and apricot. There's a lively undercurrent of citrus zest (lemon, perhaps a hint of grapefruit) that adds a refreshing lift. Subtle savory notes of fennel or aniseed, a delicate almond or nutty quality, and sometimes a whisper of honey as the wine shows a touch of age or richness. Palate: This wine is truly a revelation. It feels full-bodied and substantial, yet it maintains a remarkable freshness and vibrancy. The flavors mirror the nose: juicy peach, apricot, and ripe pear are prominent, beautifully balanced by a zesty citrus acidity. There's a wonderful creamy texture that coats the mouth, adding a luxurious feel without being heavy. Finish: Long, elegant, and incredibly satisfying. The fruit and mineral notes linger, ending with that refreshing saline character that encourages more. It feels refined and leaves a lasting impression of quality and balance.
Elegant golden colour with shiny reflections. Subtle and delicate, the nose reveals a seductive aromatic bouquet with notes of juicy pears and quince highlighted by a touch of honey which brings tastiness. Full of roundness, both opulent and well balanced, the palate offers superb aromas of juicy fruit which extend into a long finish supported by a delicate bitterness. An elegant wine, of great finesse.
Serve chilled at 10°C in tasting glasses.
Pairings: Guinea fowl with morel mushrooms and Epoisse cheese, grilled turbot with almonds.
