Domaine Laroche Chablis Saint Martin 2023
Nose: Pure, bright, crisp freshness. Aromas of green apple and bright lemon zest, underscored by a distinct flinty minerality that speaks of the Chablis terroir. There's also a delicate floral note, perhaps like white blossoms, adding a touch of elegance.
Palate: The palate is where this wine truly shines with its vibrant acidity. Lean and focused, with the green apple and lemon flavors carrying through beautifully. That characteristic Chablis minerality is very present, giving it a lovely saline quality and a sense of place. The texture is clean and precise, with a refreshing dryness.
Finish: The finish is long and mouthwatering, driven by the persistent acidity and that signature flinty minerality. I'm left with a clean and refreshing sensation, with just a subtle echo of the citrus and green fruit. There's a distinct salinity at the very end that makes me want another sip.
Pairing
Oysters: The classic pairing! The wine's bracing acidity and minerality would be a perfect counterpoint to the salinity and freshness of oysters.
Steamed Mussels or Clams: Similarly, the clean, crisp character would beautifully complement the delicate flavors of steamed shellfish.
Grilled White Fish: Flaky white fish like cod or sole, simply grilled with lemon and herbs, would be an excellent match. The wine's acidity would cut through any richness and enhance the fish's freshness.
Goat Cheese: The wine's minerality and acidity would provide a lovely contrast to the creamy tanginess of fresh goat cheese.
Salads with Lemon Vinaigrette: A crisp green salad with a bright lemon vinaigrette would pair well with the wine's citrus notes and acidity.
